Elain Plotkin's Zucchini Pie Recipe

Dear Family,

Elaine Plotkin (who I learned is one of the Three Elaines) gave me her impossible zucchini pie recipe, when we were at the delicious and fun brunch on Sunday morning. She is so nice! Well -- I went to a potluck dinner /meeting last night, and I made the zucchini pie. It was a huge success! Actually, I never even got to taste it -- so I will make sure that I taste it the next time that I make it. Elaine had written her email address on the back of the recipe, but now I can't find it. I know that it is somewhere in the kitchen -- but, while I continue to look for it, will you please send my Thank You to her. Just in case you don't have the recipe, here it is (I wrote it down as soon as I realized that I had lost the card -- but I guess that you might check with Elaine to be sure):

4 C zucchini, cubed, including skin
1 C low fat bisquick
1 C minced onion
Mix these together very well
scant 1/2 c oil
1/2 c parmesan cheese
Add to the zucchini mixture 4 egg whites, beaten
Add to the mixture
Spray Pam into a 9 inch pie dish, pour the mixture in, generously sprinkle parmesan cheese over the top.
Bake at 350 for one hour.
